you install ubuntu-restricted-extras.

Presumably this thing is working by creating .desktop files in response
to files that are created in the equivalent Windows/wine path eg
~/.wine/drive_c/Windows/Start Menu or whereever that place is in Wine.

It should be possible to delete
I didn't want to take out ALL of the menu items from Wine, so I went
into the above mentioned directories and manually deleted the
files/folders. I wish that for every app Wine installs, it would keep
track of these items so that they could be uninstalled automatically.

Yes, I vote for a higher importance too. If the applications menu can't
be reverted to its original state, then wine shouldn't change it in its
first place, as it breaks the whole "uninstall" concept.
