So it seems this was indeed a problem of discoverability, not
functionality. Double tap, holding down after the second tap, drag
works.
I don't see how drawing dedicated buttons would help me - a tutorial
would have helped on the other hand.

As usual on a tap-to-click touchpad, you need to double-tap'n'hold to
drag.
In case you're not familiar with that, you need to double-tap and hold
after the second tap, that will trigger dragging.
