This is also impacting us on 10 production servers.
We've been trying to revert the security update by installing the
previous packages, without any luck to our application.
PS : we don't suffer from a Tomcat crash. Tomcat runs, but the
applications aren't.

Could you please attach your /var/log/apt/term.log file, and the
relevant logfiles from /var/log/unattended-upgrades directory?
We need to figure out which file the postinst script is trying to access
that is not present on your system. Could it be /etc/tomcat7/tomcat-
users.xml?

The postinst script is breaking because of something specific to your
environment, but I'm going to need help figuring out what it could be.
Could you take a look at /var/lib/dpkg/info/tomcat7.postinst and see if
anything in there sticks out as being problematic in your environment?

Ah, the file itself has nothing wrong with it, but here are my findings:
In /var/lib/dpkg/info/tomcat7.postinst I noticed (as it should) that
/etc/default/tomcat7 was included. In our JAVA_OPTS we just noticed that
there are actual newlines inserted into the definition (as well as in
CATALINA_OPTS
Ah, that whitespace could possibly be the issue.
The postinstall script hasn't changed in any significant way between
Ubuntu 12.04 LTS, Ubuntu 14.04 LTS and Ubuntu 16.04 LTS.
Previous 14.04 LTS security updates were:
(7.0.52-1ubuntu0.3) on 2015-06-19
(7.0.52-1ubuntu0.1) on 2014-07-24

I can confirm on my side that the whitespace seems to have been the
issue.
I cannot find a single server that spawned on or before the 19th of June
2015.
That brings an end to my search and I suggest to move and close the bug
as this is in fact could be more of a feature request in the direction
