I have the same problem on more physical PC's and VMware virtual
machines including Ubuntu 17.10. I suppose it is not Unity problem but
update manager in GUI. The issue persists at least two years from
version 16! Actually I have only one server running with old Ubuntu
14.04 LTS which is OK. All
This has been an annoyance for such a long time now.

software updater window. My hardware is a UEFI machine, Nvidia Quadro
1000M running either nouveau or Nvidia drivers.

The non-expansion of the text/data area when the software updater window
is expanded has carried over to Ubuntu 17.04. Fortunately, the initial
size is now bigger than the previous one line, but extending the window
to the bottom of the screen does not result in any increase in the text
area size.
