That configuration dialog is deprecated in GNOME3 and Oneiric so closing
the bug, feel free to open new bugs about other issues you might find in
the new version though

It appears that it uses the most recently installed browser installed
via apt. I generally install Epiphany as a fallback browser for various
things, and it naturally supersedes Firefox as default browser (even
though I want Firefox as default.)
Installing Dillo will set it as default. Of course,
this bug is still here with Jaunty RC
I've choosen firefox−3.5 as prefered application and clicking on a html
file still opens Firefox 3.0.8
