I had similar problem and made it work with this command:
VMWARE_USE_SHIPPED_GTK=force vmware-server-console
Or you may add VMWARE_USE_SHIPPED_GTK=force at the beginning of file
/usr/lib/vmware-server-console/lib/wrapper-gtk24.sh

FYI, the bug also occurs with VMware's tar installer, except that after
Force-Quiting the window it relaunches automatically and then works.
(That is the same behaviour as I saw with the tar install on my Ubuntu
dapper computer at work when I used to use VMware Server there.)
