The Ubuntu Desktop Team's focus is on the new Yaru themes. I don't think
we have plans to work on this request.
Someone from the community could salvage the old Ambiance GNOME Shell
theming and put it in the Ambiance package. (You will then probably need
to use GNOME Tweaks to switch Shell themes.
jbicha, thank you for the reply. Maybe a less flat variant of the Yaru
theme would be more aligned with the Ubuntu Desktop Team's goals?

Closing as wontfix, we don't intend to provide old versions on the shell
theme on newer series, you can keep using the bionic serie if you prefer
though.
