Just checked this last night, one of them I plug in through the VGA
port, or DVI port (with the VGA-to-DVI) adapter, and it detects it
correctly, with 1024x768 at 50
Just noticed that if I don't restart x, and switch which monitor it
uses, it works. But then when I restart x, it goes back to 640x480.
Log files coming for unsuccessful detection.

So I tried one last attempt... and that was switching the VGA cable from
the good monitor to the bad monitor, and voilah!, auto-detection
worked... so, looks like I'm off to buy a new VGA cable and looks like
this can be closed.

Hmm... noticed that if I try to use my other monitor that's hooked up
through the VGA port that it works fine and that it is detected
correctly. Could this be a problem with xorg detecting the monitor
through the VGA to DVI adapter that I have to use for my other monitor.
(Both the same monitor,
