I managed to fix this by removing the directory: ~/.local/share/mime.
Not sure how safe this is =)

Same here, i don't know where is the configuration for this. I've
already deleted all local monodevelop related config files... nothing
happens. Reinstalling monodevelop after full deinstallation doesn't
anything too! In a new fresh Account it works anyway! There is some kind
of mystic in this beh
I'm still having this issue. A new user has MonoDeveloper working
correctly, but I do not. It doesn't appear to be within Mono- copying
the .config/MonoDevelop directory over does nothing.

Glad you figured out that this isn't a bug. I however am not that
knowledgeable of monodevelop to do support. I hope someone in the
support section of Launchpad can help you. All the best.

Hm... its not an Bug! With a new (clean) User it works. where are
further config files than in ~/.config/MonoDevelop? Other suggests?

Try creating a new user on your system and see if the problem is
experienced with that user.

Using Monodevelop 1.0 in Ubuntu Hardy I do not experience this
behaviour. I can open up C files no problem.

Make a C or C++ project (wich is not important). Then create and/or open
a, with .c ended, file. It will be open in gedit. Cpp files are opened
inside monodevelop!
