Open wine configuration,go to Add application,and locate empires2.exe .
Click on it.
Below,you have Windows version option.
Just choose Windows 98,and Age of Empires 2 will work succesfully on
Ubuntu(tried on Ubuntu 9.04 version).

Judging from the AppDB pages
(http://appdb.winehq.org/objectManager.php?sClass=application&iId=99),
the crash is probably due to the copy protection; Wine can't yet handle
the weird system calls it makes. You can run the game with a crack in
the interrim.
I'm not sure which copy protection method
