thank you for your bug report, that's not a bug though, the preferred
software is using when you start the player using the key assigned to it
but not as a file associations, each file format can have a different
association and that needs to be changed in the nautilus dialog

I have the same behaviuor on Ubuntu 8.10 x86_64.
Setting Multimedia player to a different one doesn't work.
Other settings, terminal emulator for instance, work as expected.
