I have this bug also! my machine works fine. I removed the monitor to put on
a different machine.. then ssh'd into run mplayer and mpg from the command
line.. but the sound card disappeared- some permissions issue.
sudo mplayer generates sound when the monitor is removed.

The latest development release of Ubuntu is entering Beta. Please
consider taking the time to download the latest live-image from
http://cdimage.ubuntu.com/releases/lucid and see if this issue still
exists.

I was logged in via NX and using a terminal within that. I found that
if I ssh in I can do aplay -l just fine. I still need to figure out
how to make NX work for my setup, but this bug appears to be mostly my
sloppiness in assuming that I was automatically in the audio group on a
new install.

This appears to be some kind of permissions problem. If I sudo aplay -l
all is well. I found my user not having permissions for audio, and
changed that in the GUI Users and Groups, but that alone didn't solve it
for me.
