Let me rephrase. There are Debian packages existing. They can be found
at: http://wiki.squeak.org/squeak/3616. I think Ubuntu packagers can
use these ones.

We've talked to Matej Kosik and Lex Spoon about the Debian packages and
while definitely be switching to them for the next release (Hardy Heron)
but it's too late in the release cycle to do it for 7.10. The package
naming is different and there are
