Thank you for reporting this to Ubuntu. I believe that the date line in your E-Mail violates RFC 2822. Where you have UT, there should be a time zone offset. Thunderbird/Evolution assumes the date is UT or Universal Time which explains why you're seeing the time -7 hr since MST is UTC -0700.
