No, Baobab scans the whole filesystem by default, meaning everything is
mounted. You can uncheck unwantede partitions from the Preference menu.

Oh, there is a way. But I think Baobab should behave like Filelight on
that respect - meaning, only the partition selected is scanned, without
having to configure anything.
