Ubuntu does not appear to have a good serial terminal program available.

As far as I can tell, the three options are minicom, gtkterm, and
cutecom.

minicom is mature and full-featured, but the display is character-based
and its interface is cryptic.

Both gtkterm and cutecom seem rather unfinished (and not actively
maintained).

It would be good if Ubuntu had available a serial terminal program
comparable to TeraTerm (http://en.wikipedia.org/wiki/Tera_Term) or
Hyperterminal (http://www.hilgraeve.com/hyperterminal.html).  Good
serial communications (with easy logging) is a key tool for development
of embeded systems, and not having a serial terminal program that works
well is a detriment to using Ubuntu as an embedded systems development
platform.
