That might be another gtk-qt-engine bug, are you sure that's the icon
theme and not the GTK theme being the problem? How do you select the
Kubuntu human theme? What package did you install to have it
available?

putting to package gnome-desktop as icons shouldn't be able to crash the
desktop. maybe add ubuntu-artwork or kubuntu-artwork as well?

Sorry, the bug seems to happen only with the Kubuntu human icon theme.
I'm running Ubuntu Edgy (up to date); I've made too fast the link
between the theme and kde...
