Alex - if the icon is in the Dash, in the Installed section, then you
have a .desktop file for inkscape somewhere in the path that Unity picks
up applications from. Most likely one of:
/usr/share/applications/inkscape.desktop
/usr/local/share/applications/inkscape.desktop
/usr/share/gnome/applicat
Apologies for being unclear; the icon remains in the *dash*, not the
launcher.
