Wine currently needs to be compiled with -fno-stack-protector on later
versions of Gaim. You likely left this switch off.

Unless you are doing development work on Ubuntu, I would highly
recommend using the repository instead of compiling wine yourself.

The steps are:
./configure --prefix=/usr/local/ --with-x
...
make depend && make
...
sudo make install
all without errors - it works on dapper drake

did you take to compile wine?
The most stable thing to do would be to just download the .deb See
