I ran into this when I had my Garmin navigator connected over USB, with
its internal and external storages automatically mounted. At some stage
os-prober executes blkid -o value -s TYPE /dev/sde1 (as root)

Just ran into the same bug... This is a nasty one because it affects
ubuntu-standard.
My guess is that postinst hangs due to the grub-probe error. I'll try to
look into it when I get a chance.
Quick workaround:
Append the following to /etc/default/grub:
GRUB_DISABLE_OS_PROBER=true
Run sudo
This bug is also preventing me from updating grub in order to boot into
windows.
