I found solutions to both of these. There is a tray notifier for Evolution (though not one for Thunderbird) in the repositories, namely the packets mail-notification and mail-notification-evolution. As for the black-on-black panel legends problem, it is solved by switching the desktop theme from 'Human' (the default) to 'DarkRoom'.
