As far as I know they're the one coming from slimserver's subversion
drectory in Bin/i386-linux and I don't see any setuid flags in the
permissions.

It all depends on the installation of the sox and flac binaries.
They could have been installed with setuid root, which means that
whoever runs the binary it's always executed as user root. This
behaviour can be changed by issueing 'chmod -s '.

I run slimserver with user slim and it works fine when playing
supported music formats (not converted on the server). But if I play
.ogg it plays them fine but the sox and flac converters are then
executed as root instead of the slim user.
