Thanks for your very speedy response. You're are correct.
I’ve changed some of the claims around in MS ADFS and now successfully using
“http://schemas.xmlsoap.org/claims/Role” as the saml-group-attribute to map my
groups.

spot on! I have downladed the latest MariaDB/J connector and linked it in
/etc/guacamole/lib/ instead of the one from Debian. And tadaa... Subelements
now appear.
Honestly, I would have placed my bets on JDK instead, since the DB could be
read and written anyway. But I guess I'm lucky

I can confirm, Roland solution works for my. Disable glyph caching. Now you
can work with Windows 7.
