Thanks! Finally found that if one sets the layout on the Spice
settings, then the VNC screen replicates it...
This is not 100% perfect, but mostly enough for me :)

I have to confess I've not used the recording facility myself, however
to the best of my knowledge altering the playback speed not presently a
feature.
