Hi, Is it possible to define a mapping where you can define this - UPS specific shipping is booked to UPS specific Gl account whereas Fedex specific shipping is booked to Fedex's Gl account ? Thanks.

the explanation does not go quite far enough. Product.piecesIncluded and supplierProduct.unitsIncluded are used for converstion. this is done at receiving time most of the time. This may change if the company preference is to store inventory as it is received then make the conversion when shipped.
