How don't lows my data if :
1. I update this server to owncloud 8
2 I migrate this server to owncloud 9

You're currently mixing two different things:
migration = move the oC installation to a new server
update = update the oC installation on the same server
I think you first need to know what your want to do before you're doing it

its always possible to update/upgrade without loosing your data. Resources
how to do that were provided previously by Andrea.
Just make sure that you're doing a good backup and that you don't skip any
major releases (e.g. 8.1.x to 9.0.x won't work as you will skip 8.2.x).

I would be interested in the reason why you wouldn't go for 9.1.0 for
now. That's what I'm using and I don't see any major issue. It there

there are quite a few nasty bugs found in 9.1.0 listed here:
