I don't seem to be able to determine a simple answer from the docs/online as
to whether this is possible - I had presumed I'd be able to define a
pre-existing Xen disk image as the storage and have OpenNebula boot this
under it's control. Can anyone enlighten me?

have you had a look at your system logs (e.g. /var/log/messages)? Are there any
suspicious problems? Debugging such a behaviour is really hard and often occurs
due to some other problem (e.g. stale NFS, SSH problems, high load due to
nightly backup tasks, etc.).

I have problems on using OpenNebula with KVM and MooseFS.
In this combination I can't use Images with the RAW filetype.
This is an error/Bug of MooseFS/fuse. Here some quotes from the MooseFS
