I am trying to understand is it possible to use OpenSIPS run in full proxy
mode - in other words is it possible to avoid displaying the full call
information in the SIP header when sending invite packet to a voip

If by "full proxy mode" you are describing a Back to Back User Agent,
there is a b2bua module available to you. Check out
http://www.opensips.org/Resources/B2buaTutorial
The reason to use the B2B module is to hide your network topology.
