Perhaps the following statement from the help file applies:
"The text color is ignored if the Print black check box is selected in
Tools - Options - Text document - Print."

You aren't clicking sufficiently long enough to bring up the colour
selection floating toolbar. If Help > Contents > Index > Search term >
