currently solving the same problem. It looks to be done with
preinstalled raid mirror separately and follow with oVirt-ng standard
install to get md raid as single disk.
Or, use HW raid if available.

I run a small cluster of Rocky 9 hosts all provisioned with multiple
Raid10 partitions spanning a range of disks. It works great but is also
auto-provisioned with Raid10 in place, not modified after the fact.
My first thought is your initramfs is lacking the raid modules.

I used centos Stream8 instead of oVirt node NG and it works well.
i don't know why but i wans't able to change grub parameters.
/etc/default/grub was modified
grub2-mkconfig-o /boot/efi/EFI/centos/grub.cfg was sucessfull
dracut -f -v --mdadmconf finished OK, but after restart there was old
