Hi, When opening mail app on iOS the device is doing a sync. This lasts more than 60 seconds. I can't see anything in the logs, neither with tcpdump. Seems that the iOS is waiting on something.
What I realized as well is that after deleting a mail in the web frontend it will not disappear on the iOS device. I tested it with Debian wheezy and Ubuntu 14.04, both with dovecot.
