OpenChange at the syncronisation, but here, but why, and Zentyal used, I think,
if we will not work with Z- push mobile syncro?

I'm not sure I understand your question.
If
In the company I've worked for until last year, we have started the project
of adopting Z-Push for SOGo since Openchange approach wasn't satisfying. It
went reasonably far, but then SOGo released first version with native
ActiveSync support (2.1.0 or 2.2.0?) so we have abandoned that effort.
