You can run openoffice headless (without gui) on a web server and it works as a service that can convert documents from one format to another - lets say doc to pdf. You can run firefox headless to render a webpage to virtual framebuffer.
And in unix world there are many binary tools that can be used in the background to process files so probably there will be some tool to extract the text to create a description, to render page by page into jpeg, to ocr an image into text etc...
