Versions should totally unicode-safe, so you shouldn't have issues
with German characters. As far as I know the only way to get into
trouble is to use it in combination with exotic file systems.
Like MacOS X for example... ;)

It is possible to select multiple files in the 'changed' view, but if
there are also 'changed' files, it gets very difficult and at least,
every single file has to be added manually.
