Joseph is correct regarding separate ring tones for different SIM cards, here
from a Apple support forum discussion:
If you have 1 SIM card and 1 eSIM, you can't have different ringtones for the
two phone numbers.
You can only change the ringtones for different contacts.
As for using data,
I don't believe you can have separate ringtones. But if you don't want to use
your eSIM while abroad, I would recommend just suspending the service while you
are away in the other country.

I would be travelling next month with ESim but I would be getting the
physical local Sim just as soon as I get to my destination. I would use my
ESim just to keep an eye on incoming calls as I don't want to pay roaming
charges.
How can I make sure that I am absolutely not using ESim's
