I have had the most success with Apple Pay when I use only a single
payment method. For me, the payment method is a debit card so I can
make free person to person payments.

I use the native mail app with my Outlook account. What works for me is to open
the email, touch the bottom left corner and swipe right as the attachment is
usually at the very bottom of the email.
