If it is a icloud.com address, that can't be changed. You just have to create a
new one. If it is a Gmail address, you can go to appleid.com, login with your
information, and find the place where your email address is, and you can enter
in the new email address that you want to use.

There are CereProc voices which are high quality and cost 1$/voice.
I have just installed one of them. They do appear to be of solid quality

I have used AIRA for a similar situation with a different thermostat with a
flat screen. They can see where you are putting your finger and guide you to
the right place.

The Nest or Google Home apps are not fully accessible when it comes to scheduling or auto scheduling. That’s why I always make changes using the Be My Eyes app, which you can also do if you have a separate device. If you don’t, it might be worth looking into another sided assistance service like Ai
