I can only agree with the first part of it. Allowing them to set
up your email, and making you an apple ID, I wouldn't recommend
for 2 reasons.
1) They will know those credentials of yours. 2) When it comes
to setting it up again, for whatever reason, you may not know how
to do it. W

I also love teaching VoiceOver to iPhone newbies.
After powering on the device triple click the home button to turn on VoiceOver.
Once you do that you can start setting the phone up.
