The best way to change is by going to
appleid.apple.com
You can add an e-mail and chose it to be the new one.
You have to create your e-mail before if it's not done yet.

If it is a icloud.com address, that can't be changed. You just have to create a
new one. If it is a Gmail address, you can go to appleid.com, login with your
information, and find the place where your email address is, and you can enter
in the new email address that you want to use.
