Do the IPhones take the standard 3.5 inch headphones or are they an Apple
specific connector?

iPhones take any 3.5 mm stereo headphoes. The one supplied is of course
Apple's own earpods but any headphones will do.

I just read that Apple may be switching to a proprietary audio jack at
some point in the future, but as stated below, a standard 3.5MM
connector does work for now. BTW, I saw this article on LinkedIn.
