I haven't used sidecar, but I'm sure it's in the iPad user guide, which you can
download from the store in the Books app.

Sidecar was an iOS 13 feature, so I'm sure it works with all iPads that can run
iOS 13 and 14. Check out the Applevis article about the Mac; it's very thorough
regarding accessibility improvements. I installed Big Sur on my 2015 Macbook
Pro, and it's working well and has some accessibility

To answer one of your questions, I think that if you have your Mac synced to
iCloud and your iCloud synced to I’m sorry and your iPhone sync to iCloud I
think you could start your document on the Mac and finish it on the iPhone. I
think you would have to have handoff turned on though on
