If you want to copy a text message you just have to flick down when you are on
the message you want and copy will be one of the rotor items.
It only copies individual messages in a conversation, however.

Apparently text selection is not available in messages. On the Action menu
there is a copy option.
otherwise there is the three finger quadruple tap to copy the last thing spoken
by VoiceOver.
