I've not had too much trouble with Siri for calling people in my contacts. I
use the first and last name fields. For businesses, I just put the business
name in the last name field since using the company field gets very mixed
results.
For directions, I either say "give me directions to Fred Mey
Instead of saying, call "person name", try, dial "person name". I have had
much more success.
Also, for directions, I try to be specific. "give me directions to the
closest IHOP to my current location" for example.

Can you tell us by what means you are accessing Siri? This is to say, are you
speaking directly into the phone? Or are you using a headset. Is the phone in
a case? Or not.

speech this may help just a bit since setting this up involves you saying a few
specific sentences to SIRI in order to train SIRI to respond to your voice.
