In the Camera app when you flick to record video after setting camera mode to
video, I turn speech off, then double tap, which starts the recording, and
double tap again when I’m done, then turn speech back on again with three
finger double tap; that illiminates voice during recording.

This sounds like a future choice which should be built-in to the Camera app
itself. Meantime, try using a set of headphones since the phone won't hear
itself. This is a similar problem when using voice control with speech. Again,
are use headphones so the phone doesn't hear itself.

I know the camera has given guidance for a while now, but I don't
remember it doing this when recording video. But this morning I was
