Is there a good app so that one could text from the iPod touch to someone who
is not using an iDevice and the receiver would also not need to install a
special app. We need to be able to text grandma who cannot install an app on
her phone. :)

suggestions, but you could do what you want with Google Voice.

Yes, you'd go to voice.google.com and request a phone number. Once you
have this number, you can use the Google Voice app or the web page to
send a text from your Google Voice number to any number that can receive
a text message.
