I also would like to activate facetime with either a different email address
then my apple id or my phone number and I don't get that option in settings,
facetime. Any suggestions?

Hello,
Create an iCloud account using the email address you want to use for Messaging
and FaceTime. To do this, go to iCloud in Settings, and double-tap the button
for entering an Apple ID. Your iCloud account can be different from your Apple
ID.
