If you go to the VoiceOver settings and in the roter, there is an option for
text selection. Put that in there. Now go to the place you want to select text.
Now use the roter and go to text selection. Now flick up or down to get to the
amount of selection that you want to select such as

Can someone please explain to me again how to perform the pinch gesture to copy
and paste? Sometimes the edit in the rotor doesn't work... and I should be able
to copy or paste whatever I want. lol.
