I recently purchased a couple of 320GB hard drives that I put in to
some old external drive cases (Maxtor) without knowing that these
cases IDE/firewire boards were IDE 66 (IDE5) limiting them to being
formatted to 128GB maximum.

There isn't any limitation on the size of drives that can be formatted in
external firewire cases so you have some other problem I think. Either the
new case also has an older chip-set or the drives are in fact 160GB.
Bring them in here if you want and I'll put them in one of my cases that
works.
My G5 does not have a modem and hence I use my wife's G3 iMac to
send (but not receive) occasional necessary faxes. This system has
worked well until recently. On sending a fax it dials and apparently
gets an engaged or other unavailable message and reschedules for a
bit later as it is

Did you uninstall the boot camp partition with the Boot Camp utility, or via
Disk Utility?
Also, what was the exact error when installing the drivers? Was it a
Windows Unsigned error?
