Thank you Rob and Tim for your suggestions. When I removed the email from my MacBook Pro Mail account all was good - the iPhone only gets a copy of the email and doesn't remove it from the server - and I think it was this conflict causing the issue - only been the one email to do this and I thank Tim for his suggestion about deleting multiple emails.
