Yes, we have ours to not sleep at all (i.e. the screen sleeps but the computer
and 9TB external drive that all the media is on doesn’t sleep.
But then that’s so we (or more so me) can access it at any time of the night
when I’m up working at 3am and watching a movie or something while working…..
That is how I have iTunes set up, Daniel.
I am sure that Computer Sleep is the key in my case. I have several external
drives and the spin down disks setting is for their benefit and my out disk
with iTunes introduces a slight pause if the iMac has been idle for a long
time before I go to Ap
On the machine we use for our “media” (and same for quite a few clients) we
have iTunes set to auto open on startup and hide itself. This way iTunes is
always open and ready to go, even when the computer starts up again (for
whatever reason).
This way it’s always there, ready to go.

I can use YouTube, etc but NOT anything from iTunes unless iTunes is open.

For the iMac I think the relevant bit is Computer Sleep Never. iTunes is
always open.

Does iTunes have to be open in order to connect the ATV to contents on the iMac
(music, movies etc.)
On my system it has never worked without opening iTunes first.

I haven't experienced the problem you mention in El Capitan and I use ATV.
I leave iTunes open (just click red dot)
Close the lid on my MBP (it then sleeps)
On my MBP & MBA- In System Preferences > Energy Saver > Power Adapter

I regularly use Apple TV with linking to iTunes. Until recently there has
been no problem and the link to iTunes came up always. I recently discovered
that it now requires the iMac computer, where iTunes lives, has to be awake.
This used not to be the case and sleep by the iMac was no prob
